Chickpea and Sweet Potato Curry

Ingredients:

  • 2 tablespoons coconut oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 sweet potato, cubed
  • 1 can chickpeas, drained and rinsed
  • 1 can coconut milk
  • 2 teaspoons curry powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat coconut oil in a large pot over medium heat. Add onion and sauté until translucent.
  2. Add garlic and ginger, sauté for another minute.
  3. Add sweet potato, chickpeas, coconut milk, and curry powder. Stir well.
  4. Cover and simmer for 20 minutes or until sweet potatoes are tender.
  5. Season with salt. Garnish with cilantro and serve with rice or naan.
